I used this recipe for creamy lemon pasta with arugula, omitting the artichokes because I didn't have any on hand. I will say I didn't miss them one bit. I did add some diced tomatoes which one eater claimed was a "stroke of genuis."
Top it off with some Parmesan cheese.
And then proceed to eat 3 bowls.
