Grilled Peach and Kale Salad with Prosciutto and Feta

This salad is summer dinner perfection. No oven, just a few minutes by the grill, and minimal clean up so you can go relax with an ice coffee.


Grilled Peach and Kale Salad with Prosciutto and Feta

Ingredients
1 bunch of kale (4-6 cups, I bought a bag of cleaned and chopped kale because shortcuts are nice)
3-4 peaches, pitted and halved
4 oz sliced prosciutto
1/4 cup feta cheese, crumbled
1/4 cup olive oil
1-2 tbsp lemon juice
pinch of salt
vegetable oil, for brushing peaches
crusty bread for serving

1. Put your kale in a large salad bowl.  Season with a pinch of salt and 1 tbsp of to oil, massage to coat and soften.
2. Heat the grill. Brush peaches with vegetable oil and place cut side down on the grill. Grill until fruit is caramelized, about 5 minutes.
3. Top kale with prosciutto and feta, toss with olive oil and lemon juice.  Place grilled peaches on top of salad.  Serve with some crusty bread (maybe grill it with a lil olive oil and garlic? yea, do that)


Yum! This is so easy and so delicious.  I was psyched about the salty sweet combination of the prosciutto and the peaches. Go make it, summer is slowly disappearing!

Mango Peach Ice Pops

I was inspired to make ice pops after a visit to Zora Dora's ice pop stand at the Walkway Over the Hudson.

Zora Dora makes amazing ice pops with real fruit.  I had a pineapple mint ice pop and it was the best $3 I spent that week.

I used mango nectar and a diced up peach.

Praline Peach Pancakes

On Sunday morning I awoke feeling the need for some pancake inspiration (luckily I awoke before my mother could get started on breakfast). A quick peek over at the Bisquick website and I had what I wanted.  Pecans, peaches, brown sugar, yes, yes, yes.

Changes I made: no yogurt, put peaches in the batter.


My oh my that is a beautiful mixing bowl.


I topped them with more peaches and of course some maple syrup.

Damn It's Hot Out

It was terribly hot out this week so it was time for more ice pops! 

The concept: peaches and cream

The ingredients: pudding, peaches.


Put it in an ice pop mold and what do ya get?


A damn good ice pop that's what.

Peach Shortbread


Smitten Kitchen you've done it again!

I want to apologize to everyone who doesn't get to eat one of these because you are seriously missing out. Sorry, maybe next time.

These were supposed to have brown butter in it, but seriously I got home from work at 6:30. You got another thing coming to you if you think I am going to make brown butter and freeze it and mix them in to shortbread cookies and be able to eat them before bed time.



I often wish there was something larger than a 13x9 in pan, someone engineer that for me so there can be more baked goods to go around. Thanks.
