Mixed Berry Muffins

This was a weird morning.  

I had gotten out all the ingredients for these muffins, getting myself set up to start baking.  

Then I get a message from my dude: you should make some blueberry muffins today.  

How weird is that!?! We had not discussed baked goods at all, but somehow both wanted the same thing to eat.  

Incredible.


Mixed Berry Muffins
From How to Cook Everything

Ingredients
3 tbsp melted butter, or vegetable oil
2 cups flour
1/2 cup sugar
1/2 tsp salt
3 tsp baking powder
1 egg
1 cup milk
1 cup berries of your choosing

1. Preheat oven to 375. Line a 12 cup muffin tin with paper liners.
2. Mix butter, flour, sugar, salt, baking powder, egg, and milk in a large bowl.  Once mixture is combined, gently fold in berries.
3. Fill muffin tins 2/3 full with batter.  Bake for 20 minutes or until a toothpick comes out clean. Let rest for 5 minutes before removing muffins from the tin.

I'm going to miss these weekend breakfasts out on the patio.

Cinnamon Streusel Chocolate Chip Muffins

I apologize for my lack of posting lately.  I can list off some excuses, but then again I can also say I really don't have a valid excuse.  I wanted post number 400 to be some-what of a show-stopper, but I clearly wasn't putting forth any effort since it's been over a week since my last post.



Ok, now that I got all that off my chest... on to some muffins!  These babies are an original creation and they came out pretty darn wonderfully so I really shouldn't be too down about them being my 400th post.


Cinnamon Streusel Chocolate Chip Muffins

Ingredients
2 cups Bisquick
2 tbsp sugar
1 egg
1 cup milk
1 tbsp cinnamon
1 cup chocolate chips
For topping:
1/2 cup sugar
1 tsp cinnamon
2 tbsp butter
2 tbsp flour

1. Preheat oven to 400 and line a 12 cup muffin tin.
2. Mix Bisquick, sugar, egg, cinnamon, and milk until combined.  Stir in chocolate chips. Pour batter into prepared muffin pan, cups will be about 2/3 of the way filled.
3. In a small bowl mix together sugar, butter, cinnamon and flour until mixture is crumble. Top each muffin with mixture.
4. Cook for 20 minutes, or until toothpick comes out clean.


Brown sugar might also be nice for the streusel topping; feel free to give it a whirl.


And there ya have it folks, post number 4-0-0.  Super easy delicious muffins to brighten any morning.

Starbucks New Chocolate Caramel Muffin Review

It's been a while since I've reviewed anything, so here goes nothin'.  I got an intense amount of giftcards this Christmas from my students.  Starbucks was the predominant gifted giftcard, so needless to say I've been treating myself to some tasty coffee a few times a week.



On this particular day I decided I deserved a treat as well as a latte.  Behold the chocolate caramel muffin!  It's cute that they call this chocolate caramel filled treat a muffin and not a cupcake.  It's a muffin, so I can totally eat this thing for breakfast right? Right on!


You can see that Starbucks was not shy about the caramel distribution here and I could not have been happier.  This is an awesome "muffin."  We will not discuss calorie content and nutritional value here.  You know what your getting into with chocolate cake and caramel for breakfast.

The official verdict? Eat it right now.  It's ridiculously good.

French Toast Muffins

These are not muffins that are flavored like french toast. These delicious babies are french toasts in muffin form.  This recipe is from Two Peas and Their Pod.

Here's how it all goes down.  

You dice up a loaf of french bread.

Plop the pieces in a muffin tin.

Pour the cinnamon vanilla custard mixture over each one and let it all soak in for a few hours.

Top with brown sugar cinnamon streusel.

Eat up!

Feel free to serve these up with some syrup, but I didn't think that was necessary.

These are sooooo tasty!  They would make an impressive addition to a brunch table or even a holiday breakfast.

Peanut Butter Honey Muffins

Ok, let's just get something straight right off the bat.  These were not good.  They tasted quite heavily of baking powder.  As I was mixing the batter, I thought to myself this is a shit ton of baking powder...,  but sadly I dutifully followed the recipe.

For your entertainment though, I took a ton of amazing photographs of these not very tasty muffins. Enjoy the food porn!


Ingredients line up.  Check out those adorable cupcake liners I got.


I was given these super-cute measuring spoons from Anthropologie as a thank you from work. I was very excited to scoop mounds of baking powder into these muffins.


The lighting is gorgeous, the liner is pretty, the muffins tasted icky.


Ooooo my artsy muffin pictures came out way better than they tasted.

Note: I have checked the blog I got this recipe from here and somehow that has the proper proportions of baking powder as opposed to the page I had starred on my Google Reader.  That being said these will probably taste awesome if you follow the recipe I just linked.  I'll have to give these another go.

Pumpkin Muffins


I'm going to just cut to the chase here, these babies have 2 ingredients. 2! Cake mix and a can of pumpkin. Amazing isn't it? Awe inspiring isn't it? Are you perhaps shaking your head in disbelief? Trust me, it's for real.


I also mixed in some pumpkin pie spice for the hell of it.


This is what I used to make the glaze.  I was a bit disappointed in how little pomegranate flavor was present because the sugar to liquid ratio is so high.


Here they are all glazed up!  

Word around the street is you can substitute pumpkin into brownie mixes as well. I'll keep you posted on that one.

Raspberry Coffee Muffins


I received a cupcake-a-day calendar for Christmas. I am 193 days behind the 8 ball on these recipes so I figured now is as good a time as any to get started.

I made these raspberry coffee muffins for my boy's first day of school. I must say I was a little nervous about how they would come out considering the recipe listed an ingredient and then never told me what to do with said ingredient. It also claimed to make a dozen muffins, I ended up making 24 and a giant ramekin heart. I'm not quite sure what kind of gigantore muffin tins cupcake-a-day author is using, but clearly ours were not the same size. Needless to say I think I can safely claim they were a success.


And of course, an innards shot:
