The goals on this particular Saturday night was to not leave the house, for dinner to not be a project, and to use up some of the 2 lbs of zucchini in the refrigerator.
So I give you spaghetti with zucchini, spinach, sun-dried tomatoes, and capers in Tuscan herb olive oil.
Sprinkle with some Parmesan cheese and eat several plates full and be happy that all goals for the evening where achieved.
