It was more difficult than I expected to find a recipe for stuffed zucchini that did not involve some sort of meat. Finally I came across this one that I used as a guideline.
I stuffed my zucchini with corn, broccoli, leftover scallion rice, and the zucchini flesh. I topped them off with some Mexican blend cheese we had on hand.
Now I need to focus on the ragerrrrrrrrrrrr I'm throwing this weekend! Get excited kiddies!
