Linguine with Corn, Arugula, and Leeks

I finally cooked up a weeknight meal for my family last week. I have been eyeing this recipe from Real Simple for a year now and since we had most of the ingredients already I felt compelled to cook it.

The only changes I made were that I used linguine instead of fettuccine and roasted the corn beforehand.

I absolutely loved this and am ready to make it again.

Stay tuned because it was someone's birthday this weekend and you know what that means... desserts!
