This list of ingredients is so simple it's ridiculous. Potatoes, leeks, veggie stock, salt and pepper. Totally ridiculous right? I had to control myself not to add anything more. I wanted some snazzy seasonings or another vegetable or some cream... something. But I am seriously glad I was able to reign in my impulses because this was perfect just the way it was written.
The most difficult part of making this soup is the prep work; peeling potatoes and cleaning those damn dirty leeks.
I served it up with some seriously indulgent Texas toast.
My only mistake was trusting the "6 to 8 servings" on the recipe, clearly the cookbook has never met my family.
